  • beautiful looking catch and nicely fillet'd. did you just throw the head of the fillet? we usually use that for soup.

  • I have done a lot of fish and why would you do all that work on cutting all the fins off and then fillet it? Just fillet it and leave the rest. You even cut the head off only to fillet it after? I`m not being an ass but why all that work just to fillet it?

  • @lewandlo Well, I cut the head so I can guide the knife on the top side of the bone structure, I cut the fins off so that when I get to the centre of the back i use the bones there to guide me through the back side, the rest of the way is pretty straight forward. This method allows me to do a really nice fillet. If I do it ur way I end up trimming the fins off afterwards. The clients I have like my method and I think I'll stick to it.   • @Mooseracks Thank you, We did this vid to show how easy it is to fillet a fish without removing the guts and with a very sharp knife we can accomplish that task. The vid is 4 min. long however it only takes 2 min. to do a quick butterfly fillet.

  • those pin bones come out fine if you want to pull them out with a pliers. take a pliers and lay flat next to the meat and it'll take 4-5 pulls per side. works good.

  • The technique is the same, however, since the fish is much bigger ie, 40 to 50 + we have to get someone to pull the fillet away from the skeleton as we cut along the bone,otherwise the fillet impedes the proccedure.

  • thx for replying, i mean like could u demonstrate a diffrent way of filleting salmon mabey with a bigger knife bigger fish because i have heard size in knife and fish makes a big diffrence. thx again!

  • Size does indeed matter! Or so my wife tells me. I'll be fishing for salmon and halibut in June and if, God willing, I land the big ones, I'll post a video filleting them. Thanks for your interest.

  • Nice Job! Do you recommend any particular brand of fillet knife? Also, from what I know putting the salmon carcass back in the river is great for the eco system! It releases valuable nutrients to the river providing numerous benefits.

  • Thank you for your kind comments. I'm sorry I didn't get to your question earlier. I use a 7 1/2" stainless steel knife made in Finland, distributed by Rapala. For larger fish, I use a 9 1/2" knife. You are absolutely correct regarding the eco system. I'm sure the eagles, bears and crab enjoy the treat, too.

  • I agree with you about throwing carcass in the river however this is the OCEAN and there are thousands of fish and crabs that eat all the remaining meat off the bones. But you might tell all the salmon that go up RIVERS to spawn, that they should not die in the RIVERS but wait and do it in the ocean. Then the Eagles, bears and other wild life would get on your case because your screwing up the eco system!!!!!

  • You shouldn't throw the dead carcass of a fish back into the river, stop polluting the ecosystem, you meat eaters r whats causing global warming and all these problems.

  • your a moron, eating meat has absoloutly nothing to do with global warming, you dont think another fish or birds will eat that stuff? unless ur on a lake throwing that back into the water is no problem. fish die in the water all the time. it doesnt make the ecosystem any worse

  • You are an eco-challenged moron. You may know the buzzwords, but you know nothing about ecosystems. These Salmon spawn and die in RIVERS. Their rotting bodies supply food for bears, otters, eagles and other creatures. After the young Salmon hatch, they feed on microscopic bits left from their parents. Think about that next time you are at the sushi bar.

  • @studywar Fish die all the time in rivers. Actually he should throw the carcass back to maintain the ecosystem and prevent the depletion of nutrients!

  • Awesome! Tell me, aren't there pinbones left in the butterfly fillets? How do you remove them, if so?

  • If the pin bones are the side bones that connect to the latteral line no, they stay in till the salmon is cooked then they come out easy. If you wish to remove them like we do for ling cod, then you can slice on either side of the bone, but then the fillet doesn't look good, or you can pull them out with tweezers which is a little time consuming.
