Red & gold shirts fighting was in the 2nd season TOS episode, "Obsession"
Kirk is in the gold, ensign Garrovick, the son of Kirk's former captain, is wearing red.
This episode, along with the episodes "The Apple," "The Changeling," "Mirror, Mirror," & "That Which Survives," had the highest body count. Each one had a minimum of at least 3 redshirts getting killed.
The episode where the red shirt is figting with the Gold Shirt is The Doomsday Machine. Red Shirt security Guard and the Gold Shirt is Com Matt Decker. Decker is trying to escape to a shuttle so he can attack the Planet Killer Machine that almost destroyed his ship and Killed his crew.
I'd forgotten that in "In a Mirror, Darkly" Malcolm Reed was wearing a red shirt and was then killed on the Defiant. Season 4 of Enterprise really made for a great recovery.
Scotty and Uhura survived because they were regular main cast members, as opposed to the security officers, who served mainly as plot points, with the possible exceptions of Mr. Kyle, Scotty's assistant transporter chief, and Mr. Leslie.

Maybe I'm imagining this, but I think there's some character-sapping forcefield in the red shirt which makes a man vulnerable to attack and death.

Yes it was. It was either from DS9 or TNG. I can't remember if it was a time travel or a holosuite/deck storyline. He was only 13 when the original Star Trek hit the air, so he was too young to be one of the original redshirters.
It was from the DS9 episode Trials and Tribble-ations. The crew from DS9 for reasons I won't spoil here go back in time and interact with the original crew in the TOS episode Trouble with Tribbles.
