For the Burbon Detection thing, The Fragrance of the Liquor as well as the DNA could be Detected in theory by a mixture of Dog Technology (that CIA use to track scents of people, it pretty much is the technological version of a Dog's Nose) a Breathalizer, Vapor Detection and probably some variant of Black Light Vision.

The challenge maps are good for getting the Mano-a-Mano trophy/achievement - i think the level is called rumble in the jungle(?) If u have the explosive gel add on that detonates near the enemy; u can do it that way
