  • @aceking1221 I've been a chef for 15 years. It's typical at top Italian restaurants.

  • @chefkoo if you want to cook risotto to order, and not let ur customer wait 20 to 30 mins or have it overcook by the time the fire comes up. part-cooking it is the only way to guarentee both won't happen

  • @aceking1221 Well I hjave no way to illustrate that what I'm saying is true but read Eric Ripert's, Mario Batali's, or check out Juan Marchese's book's or check out their restaurants. Is your experience reminiscent of high volume restaurants that pump up out 300 covers a night? That seems to usually be the case with risotto, but even then, there are Michelin starred Italian restaurants that serve that many a night and still make risotto from raw.

  • @chefkoo Perhaps it's done because the commies will probably screw up? I'm not a chef so I can't say though.

  • @fiend7777 To be honest, I was being facetious. I couldn't care less if my risotto was pre-cooked. In a blind taste test, I doubt I could tell the difference.
