If you create a character A on server Rome, for example, you will find that character A only on that server. If you create a character B on Xian, you will find B on Xian. You can't move a character to other servers. But you can create new characters in every server.

Yes you can change sex. But before changing sex, you must take off your armor, that is still female. you must buy male armor then.
