I use elephant hide paper, fold the crease pattern and use methyl cellulose - brush it on specific areas like the hands, shape them, let them dry and move on to another area.
If you notice the area in the crease pattern from the top of the center "diamond", above which are 2 smaller "diamonds", to approx. the center of what becomes the cap, I use all of that to form my face. It's a bit scary because it feels like you're going to totally mess the whole thing up but I agressively push it all out there and tuck it in where I hope to get the facial features I'm looking for. When I get a chance, I'll post some pictures of others I've done since this one.

If you search Google for Eric Joisel dwarf crease pattern under images, you should be able to find several printable patterns.
