  • What I'm about to say may not please you, but that isn't fudge at all, not even close! Real Fudge doesn't have eggs in it and isn't made with powdered sugar. It's also hard work to make, you need to use a candy thermometer. There is a simple version of fudge. You make it with sweetened condensed milk and thicken it by beating it. What you made looks yummy! But, you can't really call it fudge.

  • @Violon2osco The proof's in the tasting, in any case, the video title is 'MY fudge recipe'. This recipe takes about 20 minutes and is particularly easy. Much easier than mucking around with sugar thermometers in any case.

    I made fudge and I never use a thermometer.

    I'd say probably not. It needs to be icing sugar as the fudge mixture is more or less a 'paste'. Not entirely sure caster sugar would achieve that, but then, i've never tried it!!

  • would certainly work as a cake topping. Depending on what chocolate you use means you might get a slightly looser mixture. If this is the case let it cool a bit (but not too much, or it'll solidify in the pan!) then splodge it on with a spatula.

  • It acts as a binder and gives the fudge a smoother texture, mainly because there's no cream in the recipe

  • keep it covered and in the fridge, should be good for a month. It might acquire a white coating after a few days, but that's just the sugar crystallising. It's ok to freeze some of it if you wish.

    17g of chocolate fudge is about 70 calories. (More if you add nuts.)

  • I have been making fudge for years and never made it with eggs. Is this more like a rich pudding? It looks amazing anyway!

  • I'd recommend fridge, under some cling film. Mind you, the slabs can be quite big, so you might want to freeze half the slab for later on.

  • It certainly is a lot of sugar and butter, and therein lies the appeal!! I tried making it with 'healthier' ingrediants (light chocolate, sunflower spread, all that) but it just didn't bind that well, plus it tasted pretty naff. The trick is, make it for special occasions. Not just because 'it's tuesday'...

  • Well good luck. extra tip, don't worry about turning the heat down before you add the powdered sugar (trial and error) as it'll be easier to stir before putting it in the pan

    Can you recommend a way of packing the fudge after you've made it - I'm assuming you also have experience of being a fudge-packer?

  • uhhh, i can! put a layer of wax paper on the bottom of the container, put one layer of fudge evenly spaced out on the wax paper, repeat, but this time put the wax paper on top of the first layer of fudge, then put another layer of fudge down, repeat until container is full.
