The Elder scrolls don't come up in the other games because most of them are kept secure by the empire. They also cause blindness, which increases in duration, each time you read from them to see the prophecies. So the Elder Scrolls are very important lore wise, just not so much in the actual games themselves. As for Alduin, he is not the aspect of Akatosh, but the first born of Akatosh' brood.

Hell, the player him/herself can be considered to read a scroll. You are reading the scroll, watching the events of the time unfold - And that's why each of our playthroughs are different, because what we see depends on the reader and the current time and state of mind. There are no set number of scrolls, just as there are no set number of players playing this game, making the scrolls more of a "meta" thing than an actual in-game item/Macguffin.

The elder scrolls are important. In oblivion you use one to rewrite the history of the Thieves' Guild. In Skyrim one was used against Alduin (no spoilers) and you use one yourself to learn a shout.
