i think you called the third fish in the pictures a "sculpin"? i have caught a million of them things, we call em bull heads. i can tell by the horns on it. i hate them cus there only 3 inch. long and they always stick you with them horns
There are hundreds of sculpin species and many of them are commonly called bullhead. This particular species, same as the one you are catching, is called pacific staghorn sculpin.

We generally use dough (simply a mixture of flour and various scented powder, eg. shrimp powder, etc) or dew worms.
