  • @Bettyblushes your pretty close to a rosetta if you could do the love properly, just pull the pitcher back when the time is right, and keep the tempo and you'll have a rosetta =D im a barista myself =)

  • Thanks! I'm new to the universe of making my own lattes so I took notes:

    1) open steam valve with nozzle at top of milk, then "watch for subtle change" in the milk and the face of your roommates.

    2) tilt the jug, drop tip all the way in, get milk swirling. This "unifies the milk" and makes it look like you know what you're doing.

    3) once jug is too hot to hold, count to 3 and then stop.

    4) remove from heat then spin the jug and glare at everyone around you with your best coffee geek stare.

  • At least you can steam milk properly, everywhere I go I get burnt milk, way too much foam and the whole cup is too light. As for the art, you got a way to go but that is pretty good! Why is the crema broken on all 3 coffees though? Is that just the machine?

    2. how do you get less thick milk? mine gets way too thick, and really makes latte art virtually unachievable. I've done rosseta's and heart's before, how do I get the milk right to do the pour well

  • 1. I'm not sure what "won't work" means. Most espresso machines with a decent amount of steam will still be able to texture milk with cream in it... It won't foam as much, but it'll definitely do something. Latte art aside.

    2. You're probably stretching too much. Don't leave the steam tip at the surface of the milk for too long. Stretch immediately for a short time and then drop the tip into the milk and spin until it gets hot enough.

  • I've found that the more fat in milk, the better latte art I can make.

    Cream would work, but the way you handle it is entirely different from how you would 2%

  • I mix a dash of cream into my whole milk. Froths up nicely.

  • @szorin13 to get milk right you need to make the right ammount of froth, to thick usually means to much froth, or you let it sit to long, make sure your milk is fresh and cold.and the main thing is practice.

  • You can indeed... It won't taste the same, and it won't steam the same... but I've heard from reputable sources that a combination of milk and cream can steam quite well, and provides a much thicker / sweeter experience.

    This is my old coffee machine, ancilio silvia, my grinder is a rancilio rocky. The milk jug is a cheap ass one I picked up at a kitchen shop, but I now prefer one made by Incasa. The milk comes from a cow... I think a white cow...because it's white milk.

  • You're in the US ? So I have no idea. I got my cups from a local store here in Australia... Although if I was going for class Italian ceramic cups I'd look up either Nuova Point or A.C.F cups on ebay.

Personally I'd be happy if any of my lattes came out as interesting as the first two (though I think my cheap at home 'expresso machine' precludes those sorts of results, or even a decent crema on the espresso.) Your third leaf should be on display in a museum somewhere.

  • This movie was made using a Rancilio Silvia espresso machine, and a Rancilio Rocky grinder.

  • haha. the subtitles made me laugh. it was good having what you were actually doing included, better than most of the latte art videos posted, they're less informative. even if the coffees didnt turn out as good as you planned. :) -they werent that bad!

  • the problem is you're letting the shots sit too long, that's why they're becoming too thin. All the creme has gone already. And if you want for foam, you should aerate it more. Just giving you some tips!!

  • I have a rancillio and I have been trying to make latte's for quite a while now, only a few results look kinda good, but about 3x worse than all of yours.

  • While I am a total beginner at latte art I have seen some absolute world class latte art out of a Silvia. Can produce perfect silky microfoam like the best of them!

  • please note ppl, the longer you leave the steam nozzle in the milk while it's turned off, the more milk the nozzle will suck up and the less effective and powerful the steam wand will be once you turn it on...

    though the milk was "too thick" first time round, the finished coffee ended up without enough foam on top? hmm..

  • That nozzle is the standard steam wand tip attached to my Rancilio Silvia espresso machine... So... you kind of need something like that to do this.

    I suppose you could call these latte's if you wanted.

    By the way, instead of burning your hand each time you make a latte, you could use a little thermometer with a clip to hold it on the side of the cup and cut the steam at about 140 F.

  • Then your boss has some issues... I used to use the thermometer when I first started out, but now I can tell with my hands when the milk is done... It doesn't burn, and is much easier than reading a dial.

  • And may I say its great to see someone passionate about coffee... its not just a drink, it really is an art! Too bad out here in Sydney's west there are thousands of coffee shops that don't have a clue what coffee really is (incorrect grind, over/under extracted coffee, burnt milk... argh!). So have you thought of upgrading your lil' domestic to a 2nd hand commercial machine?! (maybe just a 10L 2 group) $ :)

  • Full cream...I dunno what percent that is... 10 ?? Low fat milk will froth easier because there is less fat to inhibit the milk proteins from bonding around air and liquid molecules... but you really don't want it that frothy anyway... A little cream tastes so much nicer.

  • True, however low fat milk tends to seperate (foam and liquid) too quickly. If you take too long to pour, the foam becomes solid and falls out as large foamy 'chunks'. Full cream doesn't do this... when free-pouring you want the creamy 'glassy' milk to stay like that for a good 20 secs so you can take time to get your pour right. Also pouring too fast can knock out the air in the milk (making it rather flat), so yeah, take yur time.

  • you are doing a good job, just need a little work on your timing. you tend to go very fast towards the end, slow down the pour a little bit.

  • Hehe. Put up the sarcasm, friend. 'Isjus saying that shots without crema tend to be short ( sour ) or old.

    Start the shot pouring. As the shot pulls you have time to start steaming. This way the shot hasn't been sitting very long by the time you're finished the milk.

  • Nice thought, but when you're using a machine that has only one boiler, you need to wait until the shot is finished, and the machine has heated up before you can start steaming, which is how things are on my Rancilio Silvia.

    I can assure you the shots were just fine... although I can't see that short equates to sour either...

    And sarcasm is my best friend :)

  • For a better cap you should try to pull a shot with better crema. These ones look a bit sour.

  • in all honesty it wasn't that bad, but it could definatley use some work.if you didn't break the crema at the start of the pour it would work better. and as a tip if you have to much milk poor it out it will really help you

  • I get what cup of tea means mate... it's "cold brown custard" that made no sense... but each to their own. I drink coffee in all it's forms... black or white... there's no discrimination :)

  • Well since you asked. Whilst I dare say in reality your artistry and skill enhances the sensual delight of a real cup of coffee, which is what really matters. Is the sensual delight of coffee conveyed well in the video? Well It doesn't seem to have come over to me very well. But maybe I spend too much time mixing paint. :)

  • You're right, well textured milk enhances the experience greatly, and is absolutely necessary to pour latte art, whether the magic and sensual delight was captured in a 2 minute video taken on a mobile phone and shabbily edited with some music... I suppose that's up to the viewer.
