Me parece bien que hagan esto,ya que los sabores son peruanos...se ven ricos pero no es TIRADITO no es el ORiGINAL. pero se puede aceptar,ya que la comida es muy grande..it is not original tiradito but it has peruvian roots so it looks very good....ohhh Original tiradito of course is from Peru and it has only fish,lime juice,salt ,pepper but without onion because would be ceviche..But is looks very good though
1st, not even close to the Peruvian tiradito, the only common ingredient is the aji amarillo... 2nd, celery the most important ingredient in ceviche???? ceviche doesn´t need to have celery, I could say that more than 80% of ceviches are made without celery. I am not saying it doesn´t taste good, BUT nothing to do with tiradito
Generally, a Chef will take a classical dish or some form of food that inspires their tastes, styles and artistic dispositions and add other influences that tie into it seemlessly to make something "theirs." But as a James Beard nominee, you already know that right?
this should not be called a "tiradito", the way this dish is prepared has nothing in common to the true version. Also, any true connoisseur of this dish would cringe at the though of using "aji" in a pre-packed paste - tastes horrid! it is much better to use the frozen aji and make your own paste

it looks like cebiche instead of tiradito, a real tiradito from Peru of course ! is without onions
