Ok so start high then bring down, as bring down swish pattern then when nearly full bring to bottom for heart tip, so i need creamy brown coffee first, and textured milk, I have so much trouble trying to get the milk right though, i always get really bubbly milk and I dont get like how to steam it correctly.
the milk is supposed to mix with the espresso for the first 1/2-3/4 oh the drink - it is toward then end where you want to make sure you have the dense microfoam to distinguish between the crema and the milk.
TELL ME ABOUT IT!!! where i work what we have is CRAP it barely even creates any crema i hate it and i still try practicing... im sure if i had good stuff though id be descent... sooo what i do is practice on mochas :: )
@falcons55 try setting your grind a bit if you're allowed to. if your shot is pouring way too fast then you'll get a really shit or non-existent crema, and a crappy coffee all round.
@trashpixie unfortunetly its a super automatic machine that we cant open up.. i also think that its the tamp pressure on is very low... so for now ill have to stick with coco powder on top of my shots to create a crema like surface...

it depends wether ur using a milk jug with a lip or one without a lip& if ur using a spatulla, basically its hard to explain in words, u need to see to learn, but make sure u dont let the froth go untill u want the pattern,dont try 2make the heart until a few seconds b4 the cup is filled&dont disturb the coffee crema too much.move jug from left to right to let the milk froth out only when u want it to form the heart. then uget a circle,carry on with milk right thru it through it to create heart.
If your foam is not dense enough, the milk will fall through the crema. This also happens if you pour from a height. Try to stretch your milk a bit longer, until the milk feels at body temperature, before raising the pitcher. If you need thicker milk, then wait a bit longer.
If the milk stays on top, then you should raise the pitcher a bit sooner.
Where does Espresso come from? Coffee Beans, ground extra fine, dosed, tamped, brewed under 9Bars of pressure or the like, for 25-30 seconds); Drip, coffee beans ground medium, placed in a paper filter, hot water, etc; Press Pot, coffee beans ground coarse, placed in pot, 200F/93C water poured over coffee, steeped for 4 minutes, and pressed.
Espresso is coffee, how it's prepared is what makes the difference.
Tho/ I'm going to agree w/ heiden6, sugar, especially in your coffee should be punished

it also really depends on the espresso, because if you're using really good, dense espresso then this is much easier

Three weeks ago I got a job as a barista in a coffee house, and I absolutly love it. Hearts are my favorite, but swans are fun too :)
