  • What ingredients do you use to make your injera though? Do you use Teff flour, and if so, all Teff and with a full fermentation? or do you mix it with another flour? Only the buckwheat and selzer water recipe has worked for me but the flavor isn't as nice and sour.

  • i love loohoh,as its called in somaliland for breakfast,canjeero to the south part of somalia,injera to ethiopia its yummy! the somali version is smaller,then they use alittle oil (olive or any other oil of your choice) and sprinkle sugar when its off the fire,have it hot with tea or fried liver yuuuuum

  • The somali version is better to me. It is slightly smaller and the canjero is not as thick as the Ethiopian version. also I believe the ingredients differ

  • Love that stuff! When I first tried it I was a bit shocked by the taste. I never had a fermented flat bread such as that. And the texture is quite different from what I was used to. It's a great accompaniment for stews.

  • Oh don't knock it until you try it. SHE does use real teff and her restaurant is one of the best in Chicago. I love Almaz she is a great person too

  • Injera needs an aquired test. You have to grow with it, if not you will find it very very sour.

  • This is not the traditional way of making enjera in Ethiopia but certainly is in most parts of the western world. Ppl dont have the big 'metad' in western countries and dont even use real 'teff' so u cannot expect it to be exactly as it would back home.
