You say they aren't actually ducks but are a goose instead. Well, all ducks are in the goose family. So when referring to a normal goose, people use the term "True Goose" to make sure they are not talking about ducks.
Your duck looks very clean after you plucked her, how did you remove all of the feathers and hairs? I have processed two muscovy ducks and could not remove all of the hairs and feathers as well as this video demonstrated. Is there a certain method used for hand plucking?
@mhuffman0805 Just drop them in a bucket, with boiling hot water over them. Leave them for a short while and try to pluck them while they are still hot;-)

I'm thinking about getting some layer ducks to for their eggs and to keep them as pets. While I probably couldn't bring myself to kill/eat them myself, I have to say that the raising and killing of ducks for meat, like this guy is doing in the video, is much less cruel than picking up a fast food burger or butchered meat/poultry at most supermarkets. Unless you're a vegetarian you probably shouldn't criticize him. We live in a society where we are separated from the death involved with meat...

I usually get them into a routine of feeding every morning so they get used to running to me and eating from a bowl in front of me then when I want to catch them I simply feed them and I can reach out and grab one around the gizzard.
