  • Well i worked at KFC 5 year ago and all they do is mix the spices with the flour then dunk the chicken in water and put it in the flour mix to coat and then put it on the frying rack and put it in the deep fryer and its the same method used today when they cook it

  • I been looking for another recipe video, but I have been unable to find it. I think it was Bobby Flay but it might be from another show. It was a similar recipe to this, but he soaked the chicken in a buttermilk and hot sauce mix. Anyone seen it?

  • A deep fryer would work considering that you have less of a mess to clean up after cooking. But there's no harm in doing it the old school way.

  • What did she use as breading? Ordinary flour? Whenever I try to fry up some chicken, the outer part will all but burn up while the insides are still left uncooked. What should I do to avoid that? I'd very much appreciate a decent input. Thanks! :D

  • Do you think your oil is too hot? I think its your oil is too hot.

  • Oil too hot huh.. I dunno maybe it is. But how do I know if it's in right temperature? I don't own a thermometer.

    I usually heat up the oil with around 3/10 input for fire adjustment. 10 being the hottest possible flame by the gas range and 1 being the weakest. I use around 3 - 4.

  • It should be real low like 2; try 2

  • You need to do a better job of controlling the temperature and making sure each piece of chicken is the same size. This will make for more even cooking.

  • Each piece in even cuts huh? Maybe I'll do that. And about the volume of the cooking oil, should I have them enough to completely submerge the chickens or can I use less oil?

  • Watch video v=J4uv0HGl8-Y. I'm not sure if you break down your own bird, but even if you don't, it gives you an idea of what you should be aiming for for the size of your pieces.

    As for oil level, shallow frying and deep frying are two completely separate techniques, so you should research these separately to find out how to do them. Shallow frying takes longer and requires that the food be turned, and deep frying is quicker because the food is completely submerged. Hope that helps.

  • why do none of the fried chicken recipe videos give a ballpark stove top setting for temperature? sheesh........they always say 350 degrees or so, but never what number to set the stove top at. If it was being oven cooked it wouldn't be an issue

  • Because not all stoves have the same temperature settings. Medium can be the same as high on others, 5 can be the same as 9. They tell you the temperature because you can use a frying thermometer to check the temperature and use your heat settings to maintain the temp.
