I like the section between 6:50 and 7:20 a lot, I think I'll make a ringtone out of it. Maybe nobody I know will know it's from Shenmue (I think, but so what? This is pure genius. It doesn't matter if a lot of people recognize it as such, it just is.

Yuzo did work on Shenmue, yes. He mentions it in the interview he conceded to Kikizo (now VGD) a few years back. If I'm not mistaken, he commented it was very hard to work with Yu, because he had strict control of all aspects of the game, including the soundtrack.

I'm fairly sure. Yuzo Koshiro is credited as composer for this.

I looked into it and you are indeed correct, i honestly didn't know Koshiro was involved with the music of Shenmue. I like him even more now!

Koshiro did this arrangement, original song is not his - only a few Shenmue songs are. Rain for example.
