  • wish you would have cut into it. At Applebee's (in Pittsburgh), we would cook the steak on an iron skillet that was heated on the gas grill. It would only take about 1min on each side and be perfectly rare in the middle - almost a blue rare.

    Your steak was on there long enough to be medium.

  • isnt it bad to heat a nonstick skillet to that point? You should try cast iron.

    but yes well done is definatly leather!

    I personally marinade it in worchesterchire, garlic, salt, pepper, cyanne, and onion powder, let it warm to room temp, and cook using a hotter skillet, so hot any leftover ash on it starts to glow like coals, and cook it for a shorter time, about 1.5-2 min each side. TONS of smoke. Leaves a nice crispy and tasty outside, soft, cool red inside....I just got done making one and searched around how other people do it
