I never really liked his "Hell's Kitchen" show. But on that show, Gordon proves that he really is great. Mediocrity is not even an option. You have to be superb. So far, all of his dishes I've seen him cook is God-like.
When he's sharpening his knives, he doesn't immediately use them to start cutting food, does he? Because that's how you get metal shavings in your food.
@ninjajesus81 Technically, the definition of the word honing is to "sharpen." The honing tool is realigning the edge of a dull knife just what Gordon's doing in the beginning of the video. Since the edge of the knife is being shaped into a sharp edge, its common sense that there will be tiny metal shavings. So to be on the safe side, its best to wipe knife off before using.

@ZilyanaPW Incidentally, what fish meals have you had over a lifetime? Is it mostly fishsticks and fish 'n chips and stuff like that? Or "it was alive 15 minutes ago" fresh top quality stuff? Because that REALLY makes a difference when it comes to seafood.
