  • Yes, hollandaise is basically warm mayo. But it takes technique not to break it. Thank you for the post. It will help me get through my practical today in culinary school.

    I knew that hollandaise was made with lemon, butter, salt, plus a bit of heat and a large dash of energy.

    Now consider this, I also always used the "packet" of sauce with a heavy amount of real lemon juice to make eggs benedict.

    Now i may eat one of my favorites again and control the salt intake! (minus the time/energy)

    OHH, as a new person trying to make this, "the pitcher with a spout will help you" advise is a must! So much easier!
