  • I tried a glutenfree recipe using a bread machine: 1/2 cup goat milk + 1 egg + 2.25 cups chia flour + 1.5 tb stevia, kerrygold butter, 1tsp salt + 0.5 pkt Red Star Active Yeast

    Unfortunately, it failed to rise, and looked like rabbit droppings! I'm thinking that all the milk was quickly absorbed by the chia flour powder causing it to be too dry and not mix properly in the bread machine.

    Should I double the milk/yeast? If it works, I plan to ultimately add .3 cup mashed purple sweet potato!

  • I really like this video - I have tried some ready made gluten free flour for bread, but I don't like the taste of it, as it's mostly chick peas and beans and it doesn't rise very well. Thanks - I will try some of these tips.

  • @AletaRoberge1 Thanks. I like experimenting with different ingredients and I hope you do too. I have been trying active yeast and letting the dough rise for about 4 hours. It turn out a little bit lighter. Also, I have found to powdery rice flour that is not as course as mine and have been using about a cup to substitute for the rice I mill.

  • This is a great video on gf bread making! I wanted to recommend an awesome all purpose gluten free flour blend if you don't have time to supplement like in the video. Dakota Prairie, a new gluten free facility that is dedicated and certified is now selling 3 different blends that are all awesome! They have white, millet blend and one with sorghum and all three make great bread. Check them out with a google search of dakota Prairie

  • i have 3 children that can not have gluten,oats,nuts,corn,sugar,da­iry,soy,egg, so you know how very limited i am in preparing meals for my kids, so my ? to you is can i substitute hemp for the buckwheat to get the a higher protein& since my kids can not have any sugar what can i substitute for the honey? that is if you know any suggests will surely help me be a better cook for my kids since most of the time they refuse to eat my meals i feel very bad that i can not satisfied there taste buds

  • @domaro3 seriously what is wrong with you that your kids cannot eat these basic foods- sugar is not good anyway but oats and corn? next thing you'll be saying that they can't eat fruit because of the sugar content even though it is perfectly metabolized! You have created these allergies in your kids from over sanitizing their environment! For goodness sake start re introducing these foods as they have major health benefits and learn how to cook! grrr

  • @ldj15cs no disrespect in your unwise advise,but i was addressing goldenpizza, not you, i am not the only parent that have children that are celiac w/ food allergies, my kids eat a more healthier diet than most kids their age, you are entitled to your uninformed opinions but you do not know the history of my children's health conditions & special issues

  • @ldj15cs, Many people actually have a food intolerance (or even allergy) to corn products and do not realize it. And today's wheat is not cultivated in the same same wheat that people were eating 10,000 years ago and could survive upon. You should do some research...read a book entitled 'Eat Right for Your Type', which outlines the foods each blood type should/should not consume. I do not digest things like chicken and corn, and once I cut them out, I felt MUCH better.

  • @domaro3 sure. try as many substitutes as you wish. you may need to experiment with the ratios to get a better bread and less of a "cake". Try more molasses and without honey.

  • @domaro3, Have you looked into using xylitol for your children? It's an awesome substitute for sugar, comes granulated, and tastes like a sugar, except cleaner because it is all natural. I've used it in muffins, pies, cobblers, a few breads (but if making a yeast bread, you still must use a little honey or molasses to activate the yeast), and pretty much everything I'd use sugar in. It' not cheap though, so it's not something you'd use everyday if you were baking in bulk. HTH

  • Looks more like a hard cake.

    Gluten free bread requires Xanthan Gum.

    It's literally impossible to make Gluten Free Bread without chemicals.

    Bread does not have to be identical to Wonder® to be bread. Have you ever seen artisan breads, or even pumpernickel or rye? You have been programmed and you just cant understand something that does not fit your programming. Pita is a bread too and it's not fluffy.

    Btw, Xanthan Gum is a polysaccharide (organic, like starch) It is produced by fermentation of glucose or sucrose by the Xanthomonas campestris bacterium.

  • very nice but....this looks like a yeast free bread not a yeast bread. And you say the difference between this and store bought bread is "and I'm using yeast" I did not even see you use yeast. Plus I have been baking GF long enough o know this is a quick bread not a yeast bread!

    He actually said "the difference is... not using yeast".  This is a quick bread, a lot of gluten free breads are quick breads because gluten-free isn't as sticky - even with the potato flour.

  • Thanks for this recipe! i haven't tried it yet - I have to get the blender I think : ) My 3 year old son just got put on a gluten and dairy free diet and I'm clueless about what to actually feed him. Hopefully we won't starve while I figure it out lol. Money is an issue too so I can't spend a fortune ordering special products. I did have a question - you mentioned something bout oats having gluten - does that mean oatmeal is out too??

  • If you didn't get your reply yet... Oats do not contain Gluten. HOWEVER, most oats are cross contaminated. AND/OR Oats have a protein in them that is very similar to the Gluten protein. If it's an issue of celiacs disease or a form of autism, then oats should be "avoided."

  • The first sign of gluten intolerance is you feel incredibly tired all the time, you arent absorbing any goodness from food and are also sick sometimes and have diarhoeaa.

    You cant even have chips or french fries from a take way or chip shop because of the batter they fry in it.

    I have the quite severe version of it , cant have maltodextrin, anythig that just says flavouring is suspect too.Potatoes and rice are fine fresh meat veg is too.

    Tinned meat nearly always has gluten in.

    Spams safe.

  • fucking gluten has been making me ill all my life but the doctors never knew only been to them about 1000 times I knew there was something about gravy and flour and bread that made me worse all that shit made me bad sick and they had me on ibs meds for 20 years no help and I was called a faker gluten can make you very very ill

  • Same story with me. In fact, most people have a gluten intolerance, some more, some less. Gluten is harmful to the human being. Since I stopped eating gluten, my health has improved so much. I lost weight and feel much more energetic.

  • Looks lovely. Your measurements are mostly "about...", but I learned that baking breads needed exact measurements. Is gluten free baking more forgiving? Also, I thought all grain flours contained gluten so was surprized at the use of Buckwheat. Does anyone know more about this?

  • Buckwheat does not naturally contain gluten, so it's safe for people who are gluten intolerant. Some baking mixes/flours contain added gluten, but it would say so on the label. There are several naturally gluten free grain flours available.

    I've found that I must b very careful 2 follow the recipe exactly if I want my gluten free baking 2 b edible the first time, every time. Sometimes I experiment by substituting different ingredients or adding more/less of them w/varying degrees of success.

  • There's more awareness about celic. I think is good for every one to reduce their bread intake. especially with all the processing that goes into it.

  • I used to care for a child with gluten allergies.I often made rice bread.But I never thought of using instant mashed potatoes.Good information.
