  • @Olssono It's instant fish stock powder, also called hon dashi. You just add it to water to make the dashi stock.

  • Just made this tonight! Though I stupidly ran out of Mirin at the worst time, so I substituted raw sugar and a bit more water. I also used a bonito dashi instead of regular kelp dashi, and it turned out just as well!

  • @tija1012: Without dashi and hon-mirin you won't get that distinct Japanese taste. If you don't have these, you can still make this breaded-pork rice dish, but in Chinese or Filipino style. To make it Chinese, simply use pork or chicken stock at 2:06 and add a few pinches of 5-spice powder (or celery and ginger powders). To make it Filipino, skip the 5-spice powder, and just serve with a soy-sauce+rice vinegar+lemon juice+red chili pepper rings dipping sauce on the side for the meat as you eat.

  • hmmm you use pretty lean pork for tonkatsu which is pretty reasonable since it is easier to cook however i woulda used a thicker piece as it allows for a more juicy flavor even though it takes more effort i find it worth it

  • @migitofdoom2 actually its best to not use a thick piece since it won't cook as fast.

    Its best if its thin enough so you can completely cook it just as its fried to golden brown.

  • @tom0378 lol i agree but if you are in the mood for something full of flavor lean pork does not compare to a thick piece so since it is a thick piece obviously the cooking will be messed up since it won't cook out evenly being that is is thick you either burn the outside or its still uncooked inside so i just prepare 2 pans instead one set in high heat to fry the outside while another in low heat to slowly cook it... more effort? yes but its kinda worth it in my opinion

  • @fuckthasys If you look inside the video details, they list all ingredients.

    They are adding Granulated Dashi, which is like a fish broth. This you can find in almost any Asian specialty store, although it may be pricey. Fortunately, you don't need a ton to make this.

    The other ingredient added is Hon-Mirin, a type of cooking sake with less alcohol but more sugar, if you are lucky you can also find this in an Asian store. If not, just mix 3:1 ratio of normal Drinking Sake and sugar.

  • just made this tonight for my family; the process of boiling the sauce with the onions brings out their sweetness, and that sweet crunch combined with the salty, savory flavour of the pork is absolutely delicious! the only thing i have to say is that the bread crumb coating was a little bland - in the future, maybe mix bread crumbs with my favourite spice blend? this dish is a must-try.

  • @supertrex2 Yeah it's a special type of pan for katsudon. It's very handy and just the right size - you simply cannot make a proper katsudon without that type of pan. Even the pan handle is vertical to make it easier to transfer the cooked katsu to the donburi (bowl).

  • This is a less commercial version (street or cafe fare) and the addition of the egg topper is perhaps a bit much. Generally served with the sauce as accompaniment only (separately) this version merits trying. The cut of pork could be better, but poorer cuts are often used as they are tenderized heavily before coating to fry. Francis is wonderful. Added to my subscription list. Arigato

  • @musa2music gyudon is kinda sweet and salty at the same time which makes it really delicious, and the meat in it is thinly sliced which doesn't make it tough to eat.

    Granulated Dashi is a dried form of dashi which is a soup stock made from kelp and bonito flakes (dried skipjack tuna) Mirin is a sweet cooking wine and Mitsuba is japanese parsley.

  • Katsudon is generally considered "light meal" so if you treat your adult guest to domburi shop, make sure he gets Tendon, not Katsudon.
