@Pals86 the fries are very crispy just like deep fired, I don't think you can roast them, you need that contact and just a little oil. You could try brushing them with a little olive oil and then roasting them. if you do it let me know how it goes.
my philosophy is if it grows in the ground its ok to eat ( if edible obviously) could use ground nut oil instead of olive oil for sauteing the potato 'fries' it takes a higher heat and is still healthy cool , might try the sugar water thing, I know a good recipe for good crispy potatoes , but blanch in water not microwave man c'mon- more even cook boiled too,

Yes you can roast it in the oven. I havent done it that way for a long time but it an be done. Try it at 450 and turn it after 7 minutes and let it cook until done. Remember, you can always cook it more, you can never cook it less. Let me know how it goes. take a pic and send it to me. Rob B

shouldnt you life the meat up, then put a little marinade on the bottom then lay the meat in and put the rest ontop because it didnt look like it would get coated underneith
the fries really are great. the important thing is to work in small batches and keep all the fries in the pan in contact with the bottom. Try and get all the fries browned on at least 3 sides. Trust me, they are pretty great.
The fries are crispier if you half boil the fries before you mix it with the oil and everything. It makes crispy fries because the fries are drier after you boil it.
I think it would work on some other simple steak like a sirloin, but I've never tried it on chicken. If you do, let me know. I should work on short ribs. good luck. RB

McDonald's soaks their fries in sugar water before cooking (or the equivalent) You can do the same thing and it does makes a little difference. I'd use three parts water and one part sugar, stir until dissolved. Soak for 30 minutes. Then deep fry. ;-(

Low and Slow will give you a very nice tender falling apart flank steak. Put it in a bun /w bbq sauce and it is the best! :D
Leftover flank steak is awesome as well.

Are the fries crispy that way? I've found that soft fries are inevitable unless you deep fry. If the whole pan technique works then I'm sold.

for the molasses try brown sugar ( if you have that) and a skirt steak or beef short ribs. It will also work with sirloin if neccesary. Cook well. RB
