nice recipe but for those wanting to enter chili cook offs, the chili needs to be smooth meaning no beans! now if it's a small cook off where the grand prize is $10 to your piggly wiggly grocery store then its ok im sure :)
@BBQMyWay Thats true, many people use spices that have been in the cupboard for years and really don't do anything for a recipe other then adding a stale taste. I will try your recipe at the next local cook-off and see what happens...
Hi! I think this recipe looks really great and I would love to try it. Only problem is that here in Norway we don't have Fuzzy's kicker! Is this a spice blend? Can I make my own? Or can you suggest what to use instead?
@daFranch1se69 Trace amounts remain. We let the chili simmer for over 1.5 hours after adding the beer. According to this article on the subject, 85% of the alcohol would have cooked away. ochef.com.
I have read about that myself, there is still remaining alcohol, that being said its not enough to make one drunk, but you cant really say ' ALL the alcohol burns out', more like 'Most of the alcohol burns out'.
It looks good, but you couldn't enter it in a ICS or CASI cookoff (except as People's Choice). But I'm sure you know that. I'm going to try it and taste.
It looks good, but you couldn't enter it in a ICS or CASI cookoff (except as People's Choice). But I'm sure you know that. I'm going to try it and taste.
Dammit, now I have to go downstairs and a few more ingredients! No prob though, I'm in the first hour, and I've got most of it.....including a dutch oven. I've got stuff you don't so nananananan. (good stuff I hope) Still, added to Fav's. I've done chocolate in enchilada sauce, but not chili. My wife might have some choc chips for cookies...I think I'll steal a few when she's not looking. Thank you for being honest by informing the public that chili was invented by the Mexican people, not Texans (tho they make some very variations!) You recipe is a must try and I thank you, again for posting it. I'm have the ingredients so I'm going to try it tonight. I LOVE chile but never tried to make it.

I WON FIRST PLACE!! Thank you for sharing this recipe. I did make a few modifications, though. I added 2 jalapenos and I didn't take the seeds out and I also added 4 chipotle peppers with adobo sauce along with some smoked paprika, to mimic the smokiness of the pork. I also roasted 2 large green peppers and chopped those up as well. I also used stewed Mexican style tomatoes and some fire-roasted tomatoes. Thanks again for the idea!!
Congrats!! I would love to take the credit, but it sounds as though your alterations and additions resulted is something difference from ours. Thanks for letting me know though!
No, you definitely get the credit! I would have never thought of putting smoked pork or chocolate in it. It was that "something different" that made it a winner. Try it with the chipotle peppers next time...it gives it quite a kick!

2 of my tricks ... add the seasoning to the meat and let it absorb into the meat before adding all the other ingredients and liquid.
also most chili powder is generally cumin and red pepper. so I don't use chili powder , just cumin and my favorite ground peppers.
