Re. the colour of the water... sometimes overdye comes out in the water, from the yarn or dirt and oils come off the yarn which both contribute to the colour of the water not being as fresh and clear after as they were before. Same thing happens in the washing machine, we just don't see inside to know.
It's not like starching it, it's more like rinsing off all the dirt from your hands, after knitting something, or all the oil from your hair that would transfer to hat while wearing it, and when you clean the knits, you have to reset the stitches into their original shape for while it is drying, so it looks as lovely as it did the first day!
