Hi manjula i tried ur recipe for rasmalai and it turned out extremely good and very soft and tasty.It was very delicious and my guests loved it very much and they also commented that it is too soft and tasty than in restaurants.I felt very proud!!!
It was very easy and it also took less than an hour.I also substituted curd instead of lemon juice for curdling and i think if v use curd it would come extra soft.U can take this as tips for this recipe.Thanks for this easy and step by step recipe.

Making rasgulla or rasmalai is not difficult but it is very touchy how much water one squeeze from the paneer, how much lemon juice you added to make paneer and how much you knead the paneer, I think you have added little extra lemon juice while making paneer or you squeeze too much water from the paneer.
I gave the Paneer a really good squeeze in the Cheese Cloth and after they had been cooked in the Syrup I squeezed the Syrup out of them quite a bit before adding them into the milk at the end of the process.I will try again this weekend.
I have been watching you videos for a while now and I have learnt loads about cooking great food, thank you!

Hi Manjula! Only your recipe seems to work for ras malai as I have tried various others but they have all been a disaster. So thanks a lot for your recipe. Hi Manjula. Thank you for the recipe. It was very delicious, but I don not have a pressure cooker and so had to make do with a regular pan. As a result the texture of the paneer came out a little rubbery. How long and at what temperature would you recommend boiling it in a pan? Thank you!
mauboka, I once didn't add enough sugar, as I don't like mine too sweet. I added a tad bit sf sweetener to the milk sauce afterwards, and it was just fine. The problem is that you will need to use real sugar for boiling the rasgullas, otherwise, they will break apart when cooking them in the pressure cooker. I would recommend making them as instructed, but you can add sf sweetener to the milk sauce.
Hi manjula ji... can we add condensed milk while boiling the milk to make it thicken faster? we wont need to add sugar then... I used to make rabri like this... i am not sure if we can do the same here too...
I have added rose water to mine the first time, but I found the flavor competes with the cardamom and saffron. I now only add rose water flavoring to the sugar water when I make the rasgullas.
looks like you bought spongy rasmalai from shop because you never shown or told how to make dough for it.You have just done the easy bit putting them all in boiling milk to befool the people.please demonstrate the initial procedure.thanks.I trust you will not upset for my guidance.

Cooked these today, worked really well they came out perfectly!!
My local Sweet Center charges £5 for a box for Six pieces, so knowing how to make these at home is amazing.
The ones I normally buy have a splash of condensed milk added to the Malai (Milky Sauce) this really does make a difference to the taste - delicious,

The problem is that you will need to use real sugar for boiling the rasgullas, otherwise, they will break apart when cooking them in the pressure cooker. I would recommend making them as instructed, but you can add sf sweetener to the milk sauce.

Hi manjula ji... can we add condensed milk while boiling the milk to make it thicken faster? we wont need to add sugar then... I used to make rabri like this... i am not sure if we can do the same here too...

I have added rose water to mine the first time, but I found the flavor competes with the cardamom and saffron. I now only add rose water flavoring to the sugar water when I make the rasgullas.

yes you can add the cardamom at the same time with sugar.

quick question. On the resgulla video you say you mix 2 tablespoons of lemon juice with 1 tablespoon of water, but on the recipe on your website you say to mix 1/4 cup of lemon juice with 1/2 cup of water. What is the correct mixture? Thanks and take care.

I am American and my whole family LOVES ras malais but they take so long to make - I am searching for a short cut but still want them to be light and delicious like yours appear to be!!! A cup is an american measurement, you can find websites which will do the meaurement conversion for you.
In this case 3 cups is about 700 ml or 25 fluid ounces.
