Did these happen to start moving when you put salt on them?
Salt is both causes water to be drawn out of the tissues via osmosis and is also an electrolyte. Both of these things might make the fish muscles twitch.
It's reacting to the lemon juice you've just squeezed over them. It's creating tiny electrical charges and causing them muscles to twitch.
