Michelin star restaurant, hasn't even bothered to trim up the fillet so it cooks evenly. Plus he started it in to hot a pan so the fillet siezed up hence why the skin had shrivelled into the centre and doesn't have even caramelisation. This is abc stuff when cooking bass or bream.
