En guise de feuille papier sulfurisé, je prends deux feuilles de cuisson en silicone humide. Et je prend un rouleau à patisserie pour aplatir mon nougat.

On peut mettre dans la pâte des fruits confits que l'on désire (angélique, orange etc). Ca donne un petit côté provençal au nougat et c'est délicieux et surtout c'est moins cher parce que le prix au kilo va de 43 à 53 € ici dans le Var et pire à Saint Tropez.....

Le sirop cuit les blancs d'oeufs. Ne mettez surtout pas à chauffer mais à refroidir à l'issue du mélange. D'ailleurs il le dit à la fin de la vidéo.

Si vous avez un bac à glaçon c'est l'idéal, votre nougat prend la forme du nougat traditionnel provençal.

Hi

This is one of hardest and complicated recipe i done...so..good luck

You need:

250g peeled almond

250g sugar (caster)

300g honey

75ml water

3 eggs

an electronic thermometer able to detect to 140°c max.

First:

-you have to mix sugar and water in a saucepan to get a syrup; heat it to 135°; at the same time heat the honey in another saucepan quietly until you see small boiling.

-you have to break the eggs to separate whites in a bowl(you won't use the yellows).

-with an electric mixer you have to mix the white of the eggs with pinch of salt to obtain hard mix; the result s better with fresh eggs and fresh bowl.

-when your sugar syrup get the right temperature (135°), mix it with hot honey to get a homogeneous mix; warm it 1/2 min...

Second:

-you have to cook the eggs very quitly whit resident heater of mix sugar syrup/honey au "filet"; xcuse me i don't find the correct word in english:you must empty the saucepan very gently the slowliest as you can.

Third:

-eggs will cook and get volume; you have to dry out the mix you've just obtain with bain marie heating (ALWAYS TURN YOUR SPOON DURING COOKING TO AVOID IT BURN !!): until 127°c for a soft nougat and 135° for a hard nougat.((it's very long about 2hours))

Between this, you can roast your almonds during about 10min/200° and incorporate them as you get the final t° of you nougat and mix them.

Il faut le faire au bain marie.

C'est la t° du mélange qui faut porter entre 127° et 135° (c'est trés long)...

l'eau doit bouillir normalement.
