  • Try to use clarified butter if possible, it won't give that burnt brown taste from cooking the butter potatoes to long. Or Cook with canola oil then you can add butter last 5 minutes of cooking.

  • i dont care about the appearance of food but some times order in cooking and shape will mean thing cook evenly and without a mess, this is definately 1 of those things, just crack and egg in th mixture and squeeze them in to a flat pattie and cook you'll gt the lovely rown crisp and a tiny layer of song potato inside, theres nothing like real chips or fries,

  • Absolutely delicious! Best hash browns I've ever made. Had to use fingerling potatoes because that's all I had, but the shallots and butter worked magic on the potatoes. Thanks, Keith!

    I think I have the same peeler (fron Bron).

    Last year this very well off man died who lived on Central Park West in NYC (very high rent area). I would often see him on the streets of Brooklyn perched on a 5 gal. pail with some milk crates and a large board showing how the peeler was so versitile (it is a great peeler). He sold hundres all over the city for $5.00 each. You can see him selling on the street on many YouTube videos.

  • Wow! He died? I thought I didn't see him for sometime now. I was wondering what happened to him. I recently saw some other person, a woman, selling them on the streets by Union SQ. Sorry to hear he passed.

  • I am going to give you my wife;s secret if you want hash browns like at Restaurants. Make the hashbrown like n the video. don't fry them. next step is to Boil water (very hot.) put a thin layer (1in) of hashbrown in a container and add hot water to it, just enough to cover the hashbrownt cover it. when Hashbrown absorbs all the water is done. Now in a skillet spray oil, grab a handfull of cooked hashbrown, cover and let it cook for half a minute on each side and that's it.. Enjoy! Tender

  • My suggestion is to add an egg and some flour into the potatoes, that will make them have a defined shape and will keep them together in little pancakes. This was more of a fried grated potato in my opinion.

  • if you add an egg..then it's not a potato pancake.....not a bad idea though....

  • @keithsnow actually, it's exactly a potato pancake! a latke more specifically would use a bit of matzo meal and a little bit of egg. it doesn't taste like either extra ingredient, it's just enough to barely hold it together.

  • what happens if the potatoes turn brown before you put them on the skillet?

  • not much..they just look a little different...truth be told, is you use russets, they will turn much quicker than a yukon gold or yellow potato...brown is just oxidation..wont hurt you

  • I think the best way to drain the shredded potato of its water is to squeeze it in a potato ricer.

  • Sorry Keith, painful to watch. Haute hash browns. Yuck ! Visit some real diners to learn this traditional dish. My mom is from the South and I grew up on hash browns. Use bacon grease. (only requires a little per pound) Drop shredded potatos onto a hot griddle or pan and quickly brown the bottom. (best part) Turn down the heat for 10 min. or so. Flip them and brown other side. Enjoy. Add salt and pepper as desired. I eat mine with mustard and add a little onion with the potato shreds. YUM!

  • as my Mom always said "to each his own" by the way, I love adding bacon fat..Shhhh most people thinks it's unhealthy...but we know better right?

  • Actually, come to think of it. I can't recall if I ringed them out or not. I know I didn't use that much butter though. Maybe i'll try it exactly like this.

  • I thought you were supposed to boil the potato. I've tried this method 100 times and it never works. So I just get them at Denny's instead.
