  • Preparation:

    Pre-heat oven to 350 degrees.

    In a large bowl, Whisk the eggs, sugar and vanilla.

    set aside.

    In a medium saucepan, heat the milk and rice, whisking frequently so the milk doesn't burn. Bring to a slow simmer.

    Add egg mixture to the milk and rice ,

    cook for just a few minutes, whisking occasionally.

    Pour into 8-9 inch casserole or baking dish sprayed with oil.

    (makes it easier to clean later)

    and bake for 20 minutes.

  • * 2 cups milk (I used 1cup canned Coconut milk & 1cup Rice milk.)

    * 1-1/4 cup leftover pre-cooked rice

    * 2 eggs (I used 2 Yolks because I have an egg white issue)

    * 1/4 cup sugar ( I use 1/4 cup or so Raw Agave)

    * 1/2 tsp vanilla extract

    * 1/3 tsp cinnamon (or spice you like -to taste)

    * 1/2 cup raisins, cranberries or cherries...or whatever you like...

  • Our family is Dairy and Gluten free, so we use leftover rice from the rice cooker to make rice pudding. The trick is to use COCONUT MILK with any other dairy free milk. Also, to make it more Diabetic / Hypoglycemic friendly, use Brown Rice and RAW agave. If egg whites are an issue, you can use the yolks

    (be sure to remove yolk by hand not with shell, because you can get up to 1/4 egg white left behind!

  • If you want to store your rice longer, you can, but it has a designated purpose after its frozen, that's the only catch. Use'n it for soup? mix equal parts cooked rice to equal parts, chicken, beef, fish etc stock. I usually freeze into a chunk in plastic bowl then pop it out and plastic bag it, so I can remove all the air. Lasts upto a year but 6 months is better. You can also freeze into milk if you plain to make a dessert out of it.

  • @thewheatguy You are most welcome=) Want another one that is a favorite of me and the hubby? I will cook my rice in half apple juice and half water, a dash of cinnamon, a nice change up side dish, then this leftover rice becomes breakfast cereal the next day, warm milk and the usual susupects. Or It gets frozen in milk, and becomes the best rice pudding ever on that next chilly rainy day!

  • @thewheatguy I also do an Orange Juice version, that is either paired with fresh grated ginger to taste, or your favorite mulling spices. When I do the mulling spices, I like to tuck this left over rice into the freezer for the next time Im going to bake something previously wearing feathers, and mix into the stuffing mix, I treat it as part of the bread cubes, since its usually pretty dry after being in the freezer, but the flavor is still there in concentrate and moves through the whole bird=)

  • Savory pie, yeah, yeah, that's the ticket. LOL!

    I never thought of making a crust with it. I'm a typical Hawaiian gal and either use it for emergency rice, or fried rice. Fried rice is my answer to using a lot of leftovers.

  • Oh yeah we do fried rice too! Easy and tasty!

    Rice is a LOT more versitile than most people know/try....

    I would not try to refreeze for a crispy crust, but if that's no matter...then go ahead! It's not meat so its not a bacteria cooling issue.

    Mushy rice = rice pudding or make rice milk.

  • Haha - they are fake as far as bacon goes, but they are soy protien - thus healthier than actual pork bacon.

    I'm not a big pork fan...so faken the bacon!

  • ahhhh. i get it...lol. ur right. this is much healthier. i dont know how i would get the kids to eat it though...lol. do they taste like bacon, texture and so forth? we use to be able to get the textured vegetable protein fakin bits and you really couldnt tell the difference. but they disappeared....like many healthy meat alternatives!

  • The texture of them right out of the canister is nice an crunchy, but they do get soggy in foods. Now the taste is not the same...obviously more like spices of the bacon than the meat itself - but they 'do' to make the hint of bacon really well.

    I don't like 'fake' food - but it's really food, just fake as if it were bacon. (o:

  • Just wanted to chime in that we use our leftover (cold) rice for Fried Rice. Heat some oil, fry onions and mushrooms in a pan, throw in other veggies (carrots, broccoli etc.), scoot everything to the edges of the pan, crack/whisk and egg (add salt) and pour it in the middle- let cook slightly to scramble the egg, add more oil (if needed) cold rice and soy sauce... stir fry until ready! The key with this is to NOT over stir it once the rice is added (it will get mushy). ;0)

  • Oh yeah! That is a great way to use the cold rice! I forgot to mention that. We do that too. We also use some small meat portions (chicken, turkey, sliced beef) in that mix as well - makes a whole new meal!

    Great question!

    If you are talking about portions of meat that have been served already and they are small - take a look at my 'freezer soup' video. Other ideas are adding the extra left over ground beef to spaghetti sauce or tacos, making a casserole (those need new names)or some type of meat (chicken/turkey) salad for sandwiches or with crackers. If it's a large amount of meat left over, just slice in a pyrex dish and cover with some type of sauce or gravy (ta-da! Looks like new food!)

  • Hi Donna Just a tip: If you beat the eggs (3) then stir the broccoli & cheese into the egg mixture before pouring into the rice crust it would distribute evenly. Love the rice crust idea. Thanks !
