I make the fish's body parts individual: head, mouth, tailfin, midsection(the part that doesn't move) Then, I model the plaque and put the midsection on it. Finally, add the rest and use special controls for the body parts.

There isn't a skeleton fish though. I made him. Oh ya, I made the plaque too
