The Potassium chlorate and sugar was initiated by chloric acid, which spontaeously ignites the mixture. The only thing the sulfuric acid did was make the chloric acid from the Potassium chlorate... still cool though.

Sulfuric acids applications are too many to count. It's used in all manner of industry. Very cool, and very dangerous too as we just saw.

There is no water in (dry) sugar - just the same ratio of Hydrogen and Oxygen as Water. Concentrated Sulfuric Acid has such an affinity for water, that it 'removes' the hydrogen and oxygen from the sugar, leaving carbon and water.
