This is called breakfalling (ukemi). We do it to minimized the amount of damage taken during a technique, if we are the reciever (uke). If he hadn't done the breakfall, then he would've landed head first due to the momentum, but because he curled himself into a ballshape and spun over his head, he landed on his back instead. Notice how his hand hits the mat before the rest of his body. This is done to slow the decent.
