I hear what you're saying and I noticed that's how everyone else does this tune too. My version is a fairly loose interpretation of the song and I even changed the words a little. But that's the folk process although Pete Seeger would probably smack my knuckles for being so irreverent. But I know what you're saying!
third version that I heard today for the same song . All very nicely done, although with different instruments. Very original and creative. that's what people maybe should do with music, making it their own.

OK, I confess, I changed some of the lyrics and took some artistic license with the chord progression. But that's proof of what a really great song this is. If it can survive what I've done to it, it's a great tune!

awsome vid man 5stars but try to hold the C after your verses intead of changing to G right away, i find it sounds better but Great cover man
