Very nice demonstration and explanation, but living in Piemonte with my Piemontese husband, I must beg to differ with you about the filling. You will never find plin filled with cheese here. The traditional recipe is with rabbit, a little vedure, a touch of grana padano, although these days the rabbit is often times replaced with beef, but never a soft ricotta. Just thought you might find that of interest.

I thought agnolotti had roast beef and vegetables as filling. He used ricotta cheese.
