Your recipe looks really good (especially the barbecue pork). But when I have fried rice, I just have to have water chestnuts added. Bamboo shoots are also nice, but water chestnuts are a must. I just love their crunch!

In Mandarin, we call water chestnuts, Mati. If you like it in the fried rice then it can be found in the Asian store with other canned vegetables. In the can, they are almost ready to eat and come either sliced or in whole pieces. Drain out the water and then chop them into the size you like and add them into the fried rice when you dump in all of the other stuff towards the end. Good idea! Thanks.
