Maybe it's symbolic of the "illusion" that Al Mualim speaks of - clouding people's minds and blinding them to the truth. That being the Apple is the source of all the madness and the Old Man is actually a betrayer.

Instead of throwing them to the ground and jumping at them with the hidden blade, just dodge it and put the blade in their eye...much simpler =), good vid though
