One of the things I like about David Chang is that he really utilizes Korean ingredients and methods without being overkill about it. I find a lot of chefs with a Korean bent tend to be quite deep into it; pride comes with excellence after all. While that's not bad, sometimes I like to learn and do things lightly, without the history or cultural lesson.
Regarding David Chang's ox tail recipe, his segment is edited to the point where there are gaps in the cooking process. So, what happened to the beef jerky that he bought, the dried chilis, the "dangjung," and the so-called, "Korean kungbu" (whatever that is). Presumably, they were all thrown together in the braising liquid. Anybody have a guess to the duration of the pressure cooking time? The temperature of the frying oil? Frying time?
