    i dont have any good quality dark chocolate or baking chocolate available here

    i'd like to use cocoa powder instead..how can i substitute chocolate with coco powder and in what proportions?

  • I'm gonna do this for a bake-off with my friend. I'm gonna use this recipe. But since my friend has a little bit of a sweet tooth but not too much, is it fine I use a little less sugar? I'm using dark chocolate which is like bittersweet or semi sweet and when I made this recipe for my grandma and I used about 1/2 cup, she liked a lot but a lot of people that have a sweet tooth say it's not sweet enough.So, should I use 2/3 cups of sugar or 3/4 cup of sugar?

  • @PurpleLashess You may use less sugar. 1/2 cup is not enough, but either 2/3 or 3/4 cup would be fine.

  • Hi Betty, really nice recipe. I'm going to make this for my grandmother's birthday. One question though, my grandmother doesn't like really sweet cakes and since the kind of chocolate I have is semi-sweet chocolate which is a little sweeter than unsweetened chocolate, How much sugar do I add in to make it less sweet.

  • @PurpleLashess I would add only one-half of the sugar in the recipe with the chocolate being semi-sweet already.

  • Hi Betty!! If I make double this recipe,do I double the time too? Last time I made double, I added like 10 minutes and the toothpick came out clean but it was still a bit too soft. Tasted amazing though :)

  • @LittleMisss15x No, don't double the time, because the brownies are still about the same thickness. Since there is more batter, it will take a few minutes longer, The toothpick test should be fine to let you know when they are ready to come out of the oven.

  • Betty, I've tried this recipe twice now, and both times it turned out marvelous. However, I tried it again just now, using butter instead of margarine, and it was a disaster! I ended up with a big, buttery, sizzly mess! Definitely going back to margarine! Thank you for the recipe! ♥

  • @uru877 A square of unsweetened chocolate is 1 ounce = 28.3 grams. You could use a dark chocolate bar, but it needs to be unsweetened or to have very little sugar.

  • @bettyskitchen Hi Betty, i made this and everyone at my job were amazed at how moist and great they tasted. But i did add 1 other ingredient because i've hed it really enhnces the flavor, and that extra ingredient was 1 teaspoon of plain coffee powder. It for some reason made the chocolate flavor explode in my mouth lol..... so i want to thank you for this recipe and you sure earned that blue ribbon :) ...if you ever mke these brownies again try the 1 teaspoon of coffee powder

  • It surprises me that I failed the recipe because honestly it didn' taste bad or anything.It tasted as a brownie should,but when I cut into the "crust"on top,the whole thing cracked and caved,but the cake itself tasted fine.I think I'll try your recipe and see how it goes :)

    I'm almost embarassed to admit this,but I got a recipe for brownies a few months back.It called for chocolate chips,and 30 minutes baking time at 350 degrees.I did that,and did the toothpick test.The brownies took over an hour to bake,and then completely fell apart when I tried to cut them into squares...any idea what I may have done wrong?

  • @badbabe667 I don't think you did anything wrong, since you followed the recipe. It sounds like there was not enough flour in the recipe.

  • I just made these last night and i must say, best brownies in the world. They were so incredibly easy to make. I poured homemade white chocolate frosting over the top and crushed walnuts and it was SO GOOD.

  • Betty, I only have all purpose flour. What do I add which will equal Self-Rising flour ?

    I have baking soda and creme of tartar powder.

  • @durgaaa For each cup of all purpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt to be equivalent to 1 cup of self-rising flour.

  • and also @bettyskitchen, if my baking pan is 2 inches in height, do i need to fill the batter pan-full or just half-way of the pan? let's say 1 inch in height of batter. because i'm not sure if it will rise or not (bec. of the self-rising flour), and if the pan is full, and it rise after baking, it might pop out of the pan. thanks in advance betty.

  • hi @bettyskitchen, i've read your instructions in the previous comments for unsweetened cocoa powder, i just want to verify:

    3 tbsp unswtd cocoa = 1 oz. of chocolate shown in your video

    1 tbsp butter/oil/shortening = 1 stick of butter shown in your video

    your direction was melt 1 tbsp butter + mix 3 tbsp cocoa for every 1 oz of chocolate square. i'm not sure if the stick of butter in the original recipe will still be added.. sorry i'm confused. thanks in advance betty.

  • @YesterdaysWind I use them occasionally; you probably just didn't catch the videos where they were used. Whisks are perfect for some tasks, but if I need something beaten, I use an electric blender or an electric mixer.

  • @gymnasticslover96 For this recipe you will need butter or margarine or Crisco or shortening of some type. Chocolate alone will not have enough cocoa butter to make up for left out butter.

  • I made these like 5 times now, these brownies are the absolute best with or without the nuts. I prefer the margarine over the butter, it does taste better. Since I loved this so much I was thinking "BLONDIES!"... you should make a video on BLONDIES, I absolutely love blondies but there are not very many recipes out there

  • I made this recipe a few months ago. Before making these brownies, I always had trouble with my brownies tasting bitter (no matter which recipe I used). I just want to say that the texture and baking time is SPOT ON in this recipe, although I thought they were lacking in flavor. If you've had bitter tasting brownies, use the baking time in this recipe (even if your recipe is different, because I think the 30-40 minute cooking times on most brownie recipes are too. Thanks for putting this up

  • hey betty, i made these brownies today, they turned out excellent! the only problem was, mine weren't as big and fluffy as yours, however i followed exactly what you did, do you know what this is because of?

  • @XxthenoosexX Thanks for letting me know that the brownies were excellent. I think the difference in fluffiness is probably just differences in the composition of ingredients that you are able to get as compared to the ingredients I am able to get. Great job on the brownies!

  • One word comes to mind with these Brownies..Yum!! You are right it is a very easy recipe. Here is a tip for next time you make them.  If you have one. Melt the chocolate and margarine, in a glass bowl over a pan with simmering water, after the chocolate mixture has melted remove from heat let the mixture come to room tempt. then add the rest of the ingredients in the order you suggested. This way none of the chocolate gets left in the pan.

  • The chocolate is unsweetened chocolate. Here's a solution:

    Ingredients * 3 tablespoons unsweetened cocoa * 1 tablespoon butter or oil or shortening

    Directions 1. Melt butter or shortening. (I use microwave). 2. Stir in cocoa until dissolved. 3. Use one batch PER 1 oz. of unsweetened chocolate called for in your recipe.

    This will work wonderfully. The brownies will be *so much* better than the "brownie mix" kind!

I've probably made every mistake you can make, so I've picked up a few ideas over the years to pass along!
