  • the sear needs to be darker. if you're going to sear in a roasting pan with that size of roast you might as well oven sear it.

  • thank you for this video. i have to say though the wording is a bit rare. i had to giggle at 'fatty side' and 'snuggly fitting' :)

  • I guess I don't understand why you'd sear it in the roasting pan. I sear mine in a saute pan on super high heat until it's way darker than they show here. The darker the sear, the richer the flavor. But keep that heat HOT HOT HOT!
