Firstly that was an NCAA game not an NFL game. Secondly you're correct nobody is going to run full speed head first into another person without a helmet. That's why you don't see that type of hitting in, for example, rugby where they grab and cling. You also won't see a guy get wiped out while attempting to catch a forward pass because they don't have forward passes in rugby.
