  • @spicedupspy You could use spring roll wrappers but the shape is usually square - so you'd have to cut rectangles out of them. You can bake them but they won't taste as good, I'm afraid :)

    •2 medium red boiled potatoes cubed •peas •2 tablesp oil •1/2 teasp cumin seed •1 teasp coriander powder •1/4 teasp red chilli powder •1/2 teasp garam masala •1 teasp amchor powder •2 medium green chillis seeded & chopped

    Method: Heat oil. Add cumin & peas. Stir for minute. Add coriander powder. Add garam masala, chilli, stir. Add potatoes. Add 1 teasp salt. Stir-fry 2 mins. Add amchoor. Mix. Add chilli powder to taste, maybe more salt. Cool.

    You would need to use something to seal the edges; I use beaten egg to bind the edges but a flour/water paste would probably work just as well

  • @hhcamprock Hi, glad you found this helpful. Nope, I'm in the UK. You should be able to find the samosa pads/sheets/pastry sheets in any Asian (Indian) supermarket. The best brand that I've come across is 'Switz' but they're hard to find.

    Hi, they're called samosa pads or samosa sheets. You can get them in many supermarkets - but that could depend on where you live! :)

  • I really need help urgently. Going to prepare some Samosas for my girl's party next week. I have the ingredients cooked up as like for curry puffs but am at a lost as to what skin/pastry you use here (which looks perfect!) .... do you think I can freeze it (after being put into the skin and folded of course) and let it be fried/baked later? Please advise. I love the way you've folded it ... reminds me of Samosas I've eaten back home. Thanks.

  • @sunn233 Hiya. I use 'samosa pads', available at most Asian food stores. If you can't find them near you, you could try a few sheets of filo pastry though they're a bit more fiddly to use and don't taste quite the same! Yes, you can freeze them once they're made, freeze them in one layer in a tray first, once they're frozen, you can take them out and store them any way - otherwise they'll stick to each other when still unfrozen! Hope it goes well! :)

  • Oh, these are easily available where I live! I wish I could make my own dough but have never been successful. It'd be great if you're able to share your recipe, including the tamaring chutney one :)

  • there are many ways to make a triangle with a samosa or what we call Sambusa..

    my mother uses a square and cutes it diagonally and turns out as a triangle and then its pretty easy to make it 3D

  • Indeed there are! You should film your mother's technique and add it to Youtube - in case people can't get hold of the rectangular pastry sheets.

  • I'm certain you can also use water to hold the edges of the folded pastry in place. My parents also use spring roll wrap. In any case the filling is the most important aspect of preparation - spices and primarily potatoes. It's believed that even seeing or smelling the aromas of food trigger the production of insulin, which is vital in your body's utilization of glucose.

  • Yup, you can use water too but if you find a small crack in the pastry as you're making it the egg works as a better sealant :)

  • Well I belive that it is probably just what you put in them. Spring rolls are served cold while egg rolls are fried.

  • This video uses what looks like spring roll pastry. The best ready made pastry is egg roll pastry, and a flour water mixture makes a better glue. This is more of a Somali samboosa than a samosa, except samboose is mostly meat and tastes MUCH better.

  • its so easy to make the pastry, i prefer home made ones, all you need is flour, this could be all purpose flour, some water, vegetable oil or butter and salt to taste.

  • the dough is not true samosa dough, it's more like the pastry used for egg rolls...not truly indian. This type is typical of samosas made in british indian restaurants. quite terrible if you ask me...

  • Hmm these samosas aren't attributed to being Indian. They're made using Middle Eastern pastry, with a Punjabi Pakistani filling, in the UK by someone with an American accent! :)

    NB the brand I use is much nicer than the generic Indian restaurant style pastry that you seem to have experienced :) Oh, and it's fat free :D

    I could't tell from the video. Your Samosa looks absolutly perfect in shape. I'm sure it tastes just as good! Please tell us about the dough, as to what you used here.

  • Hi, I don't use either. You can buy rectangular 'samosa pads' from most Asian food stores; they're often made in SouthEast Asia or the Middle East. I recommend the 'Switz' brand. All the best! :)

  • Hi sorry for the delay! I actually used store-bought samosa pastry sheets - they weren't homemade. If you take a look at Manjula's videos, she has one of the pastry recipe :)
