They are holding the deer in place, but in this situation you are supposed to . You don't let the deer pull away, because then it stabs you again. Plus you bleed more with the horns out. It is still a recreation, but may be pretty accurate. I say its a recreation, because why would there be footage of the attack? The camera man should have helped him if one was present.

This is an obvious simulation of the attack. The reindeer is trying to pull away, not push into santa, but santa is holding on to him. When the police arrive the reindeer is still trying to pull away but everyone is holding onto the reindeer to keep him for pulling away.
