Jerry is playing the 'Wolf' It is an Alembic which was modified by Doug Irwin. It was sold at auction after Jerry died, and for a few minutes it held the record for the most money paid for a guitar. The Tiger, an Irwin guitar, sold next and for more money.

The mics are out of phase w/ each other. This canceles any sound which goes equally in bothmics (amps, drums crowd) That is why he is singing into only one mic. A very clean system w/ almost no leakage.

I love the dead's covers, and although in their entire body of work I would have to say I enjoy (for the most part) the songs that they write, luckily, we don't have to make that choice.
