The olive oil we use is pretty strong (there many that are stronger though so maybe it's more middle of the road?), but it just occurred to me the oats I use for granola are thick cut oats (bulk section), so that might make a difference also. The brand I usually buy is De Cecco Extra Virgin Olive Oil. I get it at the local health food store. It's in a dark green bottle to keep out the light and 1 liter (33.8 oz) is about $9.99 where as the others get pretty pricey.
I use olive oil (extra virgin) when I make it and sometimes cocnut oil, but almost always it's olive oil. The maple syrup does a great job of covering up the olive oil taste. I just use enough oil to lightly coat it and I don't use a lot of syrup. I do taste it raw before baking it. If there is just a hint of olive oil, once cooked it is no longer there. If it's a distinct flavor I add more olive oil add sme brown sugar.
Yeah, we've used a very very mild extra virgin olive oil, but some are more pungent than others...sometimes it works great and other brands don't work as well so we stick with all coconut (because I can't remember which brand of olive oil we actually liked for granola, how sad is that!?). So you're right, it's not impossible to use olive oil, just for us it was hit and miss. We tend to like a real hearty olive oil for other things most times.
@herbalcat ~ Thanks Beth! My kids like to mix it with some homemade raw peanut butter and honey! It's a great treat either way. We ate through that 6 cups in less than one week! So it's a pretty usual staple around here!

Is that a remodel of the cute little kitchen that had no storage space? I loved that that kitchen and all the great tips you shared because of the space restrictions. I would love a new kitchen like the one in this video but will have to make fo with my converted closet we call our kitchen. so glad you are posting new videos. I always learn so much from you.
@avon2891 ...Hi! No we had to move. We pay about the same for this home (way better kitchen) as the one with the tiny kitchen! So, it worked out well.

Yum! Very similar to the granola I made for my subscribers a couple of months ago. You just can't beat homemade granola. The coconut oil is a great addition. Thanks for sharing.
