I made this tonight for my family and they loved it. I have a couple tips:
1. As the chef mentions, don't skimp on the canned tomatoes. I got a generic brand (only one available to me at the time) and it had more water than tomato.
2. Don't get too crazy on the goat cheese. As much as I love it, it can easily overpower this dish. You can add more later if you like, but start off small.
Aside from those notes, I followed this recipe to a T and it turned out wonderful. Thanks chef!

I made this with half a cup less water for pizza sauce and it is fantastic. As I ate the tidbits of tomato from the pan that didn't make it to the water, I imagine the roasted tomatos would be good as spread on bread. Anybody try that?
Pasta has now become a global staple and therefore you can be forgiven about this recipe. However, from an italian point of view, you could have chosen a better pasta type to go with this recipe, like penne.
In fact, tomato sauce should only be combined to pasta that can be eaten with a fork. Ditalini are normally used for soup based recipes like minestrone and eaten with a spoon!
Also, IMO the roasting process does not add anything different to the same sauce slowly cooked on a stove.

Something more yummy than plain ol' goulash. Any ideas? Needs to be foolproof, and yes- I will cook on a stove, not over a campfire. (Yes, I'm a wimp).
should you be using olive oil at that high of a temperature? I'm pretty sure the max temperature for olive oil is 190 degrees. After that it turns toxic. I think avocado oil would work better as it can tolerate the 450 degree temperature.
@blowcarrot We're talking about an oven here. The air temperature may be 450° but the food will never come close to that unless you forget it for hours and hours. In this the oil is used more to add flavor rather than a cooking medium where the oils smoke point would come in to factor.

@collegehumorrules you could add stock instead, if you wanted to make it really really rich, though I haven't tried this, so it might be kind of flavour over-load.
@turara No reason you couldn't add a protein to the sauce. I would braise something like chuck or veal shank with the liquid from the tomatoes and a little water if necessary. When the meat is tender I would add it and the braising liquid to the roasted tomatoes after they were mashed/blended. Check out his True Blood pasta with beef neck sauce video on the side bar for another nice meat sauce recipe.
