The reason it stops making the 'barking' noise is because it's interrupted , not because it's thinking "oh shit people are around i better use my cat noises" it's like a person shouting and then being suddenly interrupted and then talks. The reason the noise is so loud and strange is because the cat is using all its energy into making the noise, basically just like shouting but for a cat.
