You mean on levels without Jedi? If that's the case, get a certain number of kills (not that hard to achieve unless you're playing with somebody else) and it'll say at the bottom of the screen:

Play as (insert Jedi name here)?

And you press up on the D-pad

(side of controller, four arrows) for yes, down on the D-pad for no. You can only play for a limited amount of time though. And it's a certain Jedi that you get depending on the level.
