i have seen every episode tony has made and i feel that he enjoyed this trip the most. the food here on this 3rd part was his ultimate favorite maybe.
I love my state and being from Cajun country this makes me homesick right now that i am up in Minnesota. definitely losing some weight due to lack of good food lol.

@oldranker16 I doubt those are bullet holes. It's a rural area, but it is populated. I grew up about five minutes from there. We Cajuns like to party and have fun, but we're not in the habit of shooting barn walls in populated areas. That's a campground / RV park / recreation area. Too many people around. Those are likely nail holes. The walls may have been salvaged from another building. For sheds, barns, or utility buildings, it's fairly common around here, if the materials are in good shape.
@haybails21 About Avery Island, it's the home of Tabasco sauce. They do factory tours, and there's the Jungle Gardens with plants from around the world, and alligators from right here in Cajun country. I wasn't kidding when I said they're not fenced in. Don't worry, they only eat a few tourists per day. Ha! Gotcha. About Cajun restaurants, there's several good ones in New Iberia (My home town, 5 minutes away), and Glenda's Creole Kitchen is about 35 or 40 minutes away. Got your flight yet?
@haybails21 If you plan to visit Louisiana, check out my channel. You may find some of my videos that interest you. I HIGHLY recommend visiting Avery Island. It's a beautiful. Lots of alligators. Just be aware that they're not caged or fenced in. Check out my "Later Gator" and "Cajun Fun in Gator Country" videos. We don't have alligators everywhere, but we do have A LOT and they're cool to watch. Oh, and there's LOTS of GOOD Cajun restaurants around. Anyway, have a look, and leave comments.

@mardamek1 it's true that the whole thing looks a bit gruesome, but that is part of life, and is more "real" than getting our food in a package. There was a respect and thankfulness for the animal. Getting our food this way would certainly make us think and consider if it's all worth it.
I'm neither Jewish, nor Muslim, but watching how they go about killing and separating the pig just doesn't do anything for me. In fact, it sort of goes against my upbringing and knowledge of how you should butcher an animal. I mean hack saws? come on. don't mean to bash these guys, since I admire the overall culture and the spirit they have and the fact that they don't just stuff down a burger and call it dinner. so, they have my respect, but still I don't too much like their technique...

I know that butcher shops use band saws, but that's in this country, where everything is about speed and the hell with the right way of doing things. if you just think of the butcher shops in America, then yes, there's, I guess, nothing strange about how these guys were doing it. the better way, though, would be using sharp carving knives and cleavers. these are true butcher tools.
@mardamek1 you should see how the meat that you do eat is butchered. this way is much more natural, respectful, and humane. Lets the children and the people see where real food comes from and is fresh and well used.
@tuffgrrrrl you absolutely have a point. the supermarket meat is from animals butchered in much more cruel and inhumane way. my comment wasn't about being inhumane or cruel to the animal. as far as that, I agree with you fully. what I meant is that since these guys are butchering the animal themselves, they could have done it in the more natural way - slitting the throat, so that the blood would quickly drain out from the main arteries while the heart is still pumping.
@franksrealsport The base for the dish is called a roux. Basically it's just equal parts (by weight) of fat (butter, vegetable oil, etc.) and flour. Cooking on the stove will cause it to darken. The more it darkens the more flavor you'll get out of it. The roux is the base for many dishes in cajun cuisine, most notably gumbo. The other parts of the dish i'm not sure about, but some light googling can get you pretty close to what you are looking for.
Down in south Louisiana, we live to eat. Everyone else eats to live.
