Yes, that is a real shark corpse in that scene. Read the Jaws Log by Jaws screenwriter Carl Gottlieb. The book describes how the shark corpse was acquired in Florida and then hauled off to Martha's Vineyard for that scene. the book describes the cast and film crew's real life reactions to the shark corpse.
